what are some of the best tasting sweet pepper varieties?
Will rabbits go after sweet pepper?

Rabbits don't climb so probably cant reach them

From personal experience the sweetest peppers I've ever had are Chocolate Bell, Lesya and Shephard. All very good.

I like Giant Marconi. Not super sweet but easy to chop up. Not hot at all. Jimmy Nardello if you are using them whole.

Do you care whether it’s heirloom or hybrid? Ability to save seed vs any benefits from growing a hybrid is something to consider

Me too. I really avoid growing any hybrids for this reason and only do so if it's something that I absolutely can't grow here otherwise. For me that's basil and cucumbers.

All the ones I named above are heirloom. Lesya can be a little fussy to grow but has perhaps the thickest walls I've ever seen on a pepper.
