Ingredients:

2 14oz packages dried thin Chinese egg noodles

1 pound chicken breast, cut into small cubes

1 pound cleaned, cooked shrimp

1 cup chicken broth

2 Teaspoons sugar

3 Tablespoons soy sauce

1 Teaspoon salt

2 Eggs, beaten

1 Cup red pepper, diced

2 Tablespoons ground fresh ginger

½ Teaspoon pepper flakes

2 Tablespoons minced garlic

4 Teaspoons curry powder (start with 2 teaspoons and add if you want a stronger curry flavor)

½ Pound snow peas sliced very thin

3 dried chili peppers, crushed

Sesame oil for frying



Directions:

Coat wok with sesame oil

Place chicken in wok with 1 tsp curry and cook thoroughly, then reserve

Put vegetables, sugar, salt, soy sauce and other spices (only 1 tsp curry) in wok. Cook about 2 minutes

Add scrambled eggs and mix until solid consistency is reached

In separate pot, cook noodles until al dente. SALT THE WATER SPARINGLY!!!!

In separate pot, cook shrimp until just pink, and set aside

Add noodles to wok and mix all ingredients, including reserved chicken and shrimp. Taste, and add curry to your preferred spice level.
