Pretty basic

First did the clams, then poached the fish and the shrimp in the clam juice. Then added all that juice in the passata.

Adds was Basil, onion, garlic, parsley, and just a little itty bit of bacon for fat, and olive oil. Oh and of course, I always add a bit of home made wine.

This year my passata came out really dark, really good and sweeter than usual.

The app was kale, potatoes, onion and garlic

I throw in whole potatoes with the skin, a little bits of bacon, onion then kale. I’ll start the potatoes first then add the kale last, the potatoes come out and peeled.

The top is salt and pepper to taste, olive oil and a little red wine vinegar

Thanks! I would prefer it more fra diavolo but the wife can’t handle it so it’s a little sweeter, I have to add heat to the side for me.

Last years passata came out fantastic, it was way darker than normal. And I always add wine when I’m making the gravy so when that Barbera goes in look out that deep red color!

The above wasn’t dark cause all that seafood juice went into the sauce.
