Since we were talking about Portuguese figs today. Here is a cookie recipe from an old Portuguese friend of mine. It's a very simple recipe that produces something like a sweet bread stick and you can flavor it any way you want. The is my go-to with tea or coffee if I have no shortbread made
1. Preheat if needed - Bake at 350 degrees, but no need to preheat because it will take a while to roll out the individual cookies, so turn on the oven after you finish step 5 and have a filled baking sheet unless you have lots of helpers.
2. Mix together in one bowl
3 cups all purpose flour
(keep an extra an extra 1/2 cup handy)
1 teaspoon baking powder
3. Mix together in separate bowl
1 cup sugar
2 large eggs
1 and 1/2 cups butter ( 3 sticks)
2 tsp any flavor extract ( see below***)
***Or see below if you want to make chocolate or cinnamon flavor
4. Add egg/ sugar mixture to flour mixture. Once it gets too hard to mix with a spoon, mix by hand, until combined and like playdough - if too sticky continue to add some of the extra flour until more like playdough.
5. Roll into small sticks or rings or twists and put on cookie sheet on parchment paper - you can put them fairly close together they puff up but do not spread. Bake 15-20 min or until they just start to barely change color. (time will depend on how skinny you roll your sticks) Cookies will be very pale in color.
*** You can add flavorings like almond extract, orange extract,
*** For chocolate - replace 1/2 cup of flour with cocoa powder ( you can add mint extract to the chocolate which turns out great)
*** For cinnamon replace 1/4 cup flour with cinnamon
***Disclaimer - this is a time consuming recipe (unless you have a lot of family and kids around) .... it takes a while to roll into little sticks or rings and you can fit a ton on one cookie sheet. So it takes forever till you have a sheet filled to bake. It is more fun if you have company that can help. And every kid can roll out a playdough snake so it is great for occupying kids if you have company - or you can store the dough in the fridge a couple days if you get bored and bake another batch on a different day, (But it is much more fun to make two batches of different flavors and sit around a table with baking sheets in the middle and give everyone a lump of dough on a plate and do it with friends - there will be plenty for everyone to take home)
