Our Figs Regrowing With Vigor - Pinching?

So I walked all the fig trees that froze to the ground for the second year in a row and most of them are now setting figlets or have double bumps at each leaf stem.

My question is if Pinching forces the tree to push out figs how late can I wait to do it. We are 14 miles from the Gulf on the MS Gulf Coast.

Something to consider: excess Nitrogen will reduce the rate of syconium (fig) production.
