Leftovers- A Recipe For Success

I threw this together one night 20 years ago as a quick makeshift hamburger helper and we still make it once in a while. I always called it the Dad Special aka Poor Mans Hamburger Helper lol.

1 lbs browned ground meat.
1 box of shells mac and cheese (I always liked the walmart brand but Velveeta works too).
12 oz of Classico Four Cheese Pasta Sauce (or similar)
1 cup shredded cheese.

Combine the browned ground meat, cooked pasta shells, cheese packet from the shells box, and the pasta sauce.
Mix everything together well.
Sprinkle the shredded cheese on top.
Bake in the over until the cheese has melted.
 
Eggplant parm:

Slice 2 eggplants, each slice should be about 1cm in thickness

Salt the slices and layer them with towels to absorb water, place a sheet pan on top to press out water

Leave for about 1 hr

CRack 4 eggs abd whisk, set aside in large bowl

Mix italian bread crumbs, oregano, romano cheese in a large bowl

Begin dipling each slice into egg, then into bread crumbs.

Fry in oil until both sides of each slice are browned

Now, in your caserole dish, add a thin layer of your best pasta sauce, then a layer of the fried eggplant, then fresh mozzarella and basil (pesto works if you dont have any basil), repeat until the dish is full!

Top with more mozarella, cover with tinfoil and bake for 40 min

Makes amazing sandwiches left over
 
Slap Yo Momma Chicken
2 chicken breast (split in half)
Slap Yo Mamma Seasoning
1 Diced Bell Pepper
1 cup cooked elbow noodles
4 oz cream cheese
1/2 cup chicken stock

Season chicken breast with Slap Yo Mamma.
Cook chicken in a pan with a bit of oil until it is cooked.
Make some elbow noodles.
Remove chicken from pan, add a bit more oil and cook some diced bell peppers.
Add the chicken stock, cream cheese and more seasoning to taste.
Once the cream cheese is melted add the cooked noodles and chicken back to the pan.

Slap Yo Mamma Seasoning... another one I had to look up! :)
