Thanks abunch for the stars. BTW did you ever get around to making that beans and ham soup? The way you talked about it was making me drool.
 
Lol...no, My daughter has fallen in love with my potato soup and wanted that instead.
In fact, I have to make it today after we go look at a car for her, Oy...her first car.
So I have to make that and a big pot of chili, my wife want to freeze dry some of both.

ISO a really good potato soup. Is yours a nice thick creamy one or a clear broth?

It is creamy, just like chili, it's always better the second day.
But I can do a write up for you if you like.
I use celery, carrots, and onions that I boil in one pot to soften, then my potatoes in another pot.
Always starting the veggies a bit earlier because they take a little longer than the taters.
When soft, I spoon out the veggies and add to the potatoes.
It's extra steps but I usually make a very large pot so there are plenty of left overs. lol

That sounds great. Do you make a rue with equal amount of melted butter and flour, add to the soup and stir with a little heavy cream till itโ€™s at the thickness you desire? Also sometimes restaurants put some chopped roasted garlic in, even better.

I do, I like to use the Kerry gold butter making the rue.
I have not used heavy cream though.
Roasted garlic if I have it...heck yea.
When it's basically done, I will put in a nice amount of sour cream and mix in until it is integrated....so good. lol

Sour cream! Sounds even better then heavy cream. Iโ€™m not drooling Iโ€™m SALIVATING. Yes send me your recipe.

It belonged to a doctor. it had miles on it but was well cared for and still had many more miles left in it. My husband and I always loved the Saab. We had a couple of them. We sold our last one in โ€œ95โ€ because Saab went out of business and you couldnโ€™t get parts anymore. I really miss it.

Late again but here it is, :)

6 cups potatoes cubes 3/4"
1 1/2 cups celery
1 1/2 cups chopped carrots
1 medium diced onion
4 cups chicken stock
1/3 cup butter
1/3 cup flour
2 1/2 cups milk
1/2 cup sour cream


Combine in pot & boil 10 minutes, reduce heat to medium for another 20 minutes or until veggies are soft.
In sauce pan melt 1/2 cup butter, (on low/med heat) then add 1/3 cup flour.....keep stirring while adding 2 1/2 cups milk.
Keep stirring until thickened.
Add to veggies and stir in.
Put in any spices you like...I add garlic and a sprinkle of thyme in mine..

Once everything is added and soup is done, add 1/2 cup of sour cream (I usually add 1 cup)
Salt & Pepper to taste.

Potato soup is ready.


NOTES...I boil my potatoes in separate pot than onions, carrots, & celery because potatoes soften quicker.
I also split the chicken stock between those pots, 2 cups & 2 cups...just use water to finish filling.
When veggies are done, just spoon them into the potato pot so you are not adding too much liquid.
