Freeze Dried Fig?

They actually turn out pretty dang good. If you can get over the Styrofoam texture, the flavor is maintained pretty well. It's a good alternative to dehydrated figs. Sometimes it's nice to mix it up. You can also powder them and just sprinkle a bit of fig on everything.

I was wondering how the texture was. Seems like it would be like styrofoam. I do love dehydrated
I love dehydrated too. I won't try and act life freeze dried don't have a Styrofoam consistency - they do. All freeze dried fruit does, it's just kind of what it does. They get stuck in your teeth. They are just different. I do think the subtle flavor holds better on the freeze dried though. Freeze dried also had a similar problem of them all tasting similar

I do a lot of both and enjoy them for different things during the off season. Unfortunately the squirrels cleaned me out last year so I didn't have enough to even bother last year.

Bananas are our favorite...haven't tried figs yet.
 
Mine are "Dried Freezed" ;) Get it: dehydrated then frozen. Ok sorry bad joke-
Lately I've been trying with Agar agar & fruit combos to make a Fig based gummy food. Been a delicious journey and working pretty well. Agar agar then dehydrating gets you close to Haribo consistency.

Kinda like eating a fig flavored rice cake.
 
Isn't a freeze dryer pretty expensive? I remember that used to cost $2000 and extra to run each batch. Or we have a cheaper way to do it nowadays?

Mine is a medium size and it was just over 3K, to be honest though...to run a 30 hour cycle is only a couple bucks of electircity.
They are pretty efficient to run.
I find the medium size one is just right for us, the large being over 4K...would be nice but just too big for my needs.

I do love it though! :)
 
I never thought I'd buy one, but a stink bid on Craigslist scored me a small one for 400. At that price I figured I could use it for a year and sell it for at least that price. Having used it, I didn't think I'll ever get rid of it, even if it's just used during harvest season.

That’s a real score for $400! If you ever want to part with it for that price, please let me know! 😬
 
Not sure what the shipping to Canada would be. It's a contraption. A glorious contraption. It was funny when I found it my wife was like, '"you're getting a what". I still haven't actually used it for anything that most people would actually consider food. Just fruit (mainly figs) and candy so far. Whenever Tillamook goes on sale I just cut the entire carton into 3/4" slices and let it rock.

I actually have it at work right now and other people have been using it too so the minimal electric bill doesn't actually affect me. I need to find a new job because the wheels are falling off the bus, but I currently have a beer brewing machine, a coffee roaster, and a freeze dryer there; how can I leave this place? Engineer if anyone is wondering... The CTO has informed me that they are good to stay, but he just lost his 'good to stay' as of last week so, damn it's time.

The vacuum function can also infuse liquor at an astounding rate. I think I could probably also super marinate and maybe even super cure meat in there as well. So many ideas.
