Freeze Dried Fig?

I was wondering how the texture was. Seems like it would be like styrofoam. I do love dehydrated
I love dehydrated too. I won't try and act life freeze dried don't have a Styrofoam consistency - they do. All freeze dried fruit does, it's just kind of what it does. They get stuck in your teeth. They are just different. I do think the subtle flavor holds better on the freeze dried though. Freeze dried also had a similar problem of them all tasting similar

I do a lot of both and enjoy them for different things during the off season. Unfortunately the squirrels cleaned me out last year so I didn't have enough to even bother last year.

Bananas are our favorite...haven't tried figs yet.
 
Mine are "Dried Freezed" ;) Get it: dehydrated then frozen. Ok sorry bad joke-
Lately I've been trying with Agar agar & fruit combos to make a Fig based gummy food. Been a delicious journey and working pretty well. Agar agar then dehydrating gets you close to Haribo consistency.
