Dehydrator

Will Find out! Kids are very excited to use for all sorts of things. Multiple trays for me
Means the kids can each have one or two trays each to themselves. Sometimes higher upfront expense is worth the sanity when dealing with the kids. 😂

I love my dehydrator. I use it for figs... but also much more. Herbs, peppers, onions.... even jerky

One day I hope to really take the plunge and get a freeze dryer. That's next level.... but much more of an investment.

What brand do you have? Looks more industrial than mine. Mine model takes a long time. How long does your take?

Not that they're all the same... I had a round plastic one. One day the trays just melted on me. No idea how it got that hot. Then I got worried about what the plastic may have released when heated. I ended up getting a stainless one. Not crazy expensive. Works well. Easy to use

More of a freezing as a method to keep til I get enough to make my wife a big batch of fig preserves.

That's exactly what I do. Any ripe figs that don't get eaten over the season go into the freezer. Also good ae those at the end of the season that ripen when it's too cold for them to get properly sweet. When all the figs are off the tree it's time for figgy jam

The recipe is super simple and very clean

That looks really good. My wife is convinced there’s a different between spread and jam so I have some research to do.

1kg figs (2.2lbs)
300ml Sugar (1.25cups)
60ml Fresh Lemon Juice (4 tbsp)

That's it!

Throw everything in a pot and cook it down for a few hours. Don't add all sorts of nonsense ingredients that will take away from the flavour of the figs. Hit it with a hand blender or potato masher to get the consistency you want. Fill the jars and soak in a water bath for 20 min. It's glorious!

Oh... this takes time... be gentle with the heat and stir a lot. The sort of thing you do when the weather's getting cooler and you don't mind hanging out inside for the afternoon.
