Growing days of warmer temps is necessary for many figs. Pollen will help. But with out warmth. They will not hit there peak.
I’ve got plenty of growing days in warm temps to hit great quality figs, if they set figs in early August it’s not making the peak temps, this season I expect them to start setting by early July so they should be much better.

Yes not the same as California but Iowa has longer day length than your location until early fall, increased light with similar temps in August produced great results. I think the extra light up north really helps speed things along which is necessary. We get roughly 1.5 hours more light than southern states per day at peak, temps are not much different in July-August, but my trees sit in direct sun for the entire time, only shaded portions are first 30 minutes and last 30 minutes of the day. If I get these to set figs mid June we will see the best quality it could produce, however I think the deep red color is only achieved with pollen on this cultivar.
 
Cool. I'm in Chicagoland as well. 5B. Do you find growing them in grow bag dries the soil quicker needing freq watering
They will need more watering in cloth grow bags. I grew some peonies 1 very large/wide grow bag, and all the ones on the perimeter dried out and died while the others survived. I wasn't the best about watering them consistently, but it was interesting to see how much dried the soil was on the perimeter.
 
I have a couple 2nd year trees in 15 gallon grow bags. The first year figs were so so . Didn't have any dropping either year. The second year figs were far better than the first year. Like OP said if you can let them hang and get red inside you can taste the jolly Rancher candy flavor. Perhaps this year they will continue to improve. I'm going to put 1 inground.
