Close but no cigar.

Always a sad time of year when the fig harvest comes to an end. Especially when there are so many unripe figs that were close to ripening. Three 5 gallon buckets of close but no cigar. I'll try to use some of the more ripened ones for jam. The pic of the figs on the tree was my Da Ponte. Love that tree.

Unfortunately, I have no shortage of unripe figs here at the end of the season. some can’t be used at all… And some make for a good jam. Last year I found if I took some figs that were just not quite there and dehydrated them. It concentrated the sugars well enough to make them taste pretty good. Food for thought 😬
