I seen this pic on FB, I was going to comment but I chose not to.
To me, these all look like they were picked quite a bit too early.
You can see sap on a lot of them...and plainly see that the figs really hadn't swelled up like they should have.

So what are your opinions?

Would you have picked them in this stage?

Absolutely just put them on the counter for a few days to ripen. NOT!!!!!

Waaaay too early. Sap and too dark green. Maybe fry them up like green tomatoes.

I’ve seen video where you could save and process the figs for storage in jars. Wonder if that’s what they were doing?

In some countries they pick them very early and cook them as a vegetable. It is done with many types of ficus.
But here, I would wait till they where fully ripe.

Mine are usually picked at the verge of falling apart.

These are probably picked for cooking. E.g. Cook in spice and syrup, with or without skin, or as stew with meat.

They look like they would have made a wonderful Bowl of delicious figs if @TJ's chickens could have been a little more patient.

Wow. I don't know if they are aiming for something like a green papaya salad, but they look way too early for what we are used to. You can even still see the white spots. I wonder how they were eaten.
