Fig leaf ice cream with fresh figs

Somebody told me that this is gonna be one of the best desserts. I didn’t believe it at first.

I tried it in the summer with Central Valley figs and I wasn’t that impressed. The ice cream is very creamy and has an unreal mouthfeel, but it tasted a little too figgy for me. It turns out that you really need to pair it with a really intense berry figs.

I did it again today with my own perfectly ripe caprified UP and BMZ. I was blown away!

I got a green light from my wife to build a black fig fly netting structure around the UP tree. It’s that amazing!

I imagine that it will be equally great with a really strong Adriatic.

That looks amazingly delicious! Does UP need caprification to be tasty? I may have a chance to grab one, but I was told the main crop would drop if not pollinated, so I stayed away this last summer. I am not a great cook, but next summer this one is getting made.

It needs caprification to hold and ripen. For people outside of wasps range, you can substitute it with Adriatic figs.
 
I'm very curious. How is it that colour?
You infuse the cream with leaves. This is the recipe. I got it from his book but he has it on his website too.

He is a Californian living in France. I know not Italian or Canadian 😜
