Fig Bread?

Fantastic bakers and chefs in this group.
@Toronto Joe Did you ever post your process for making charcuterie (salumi)? Not fig related but it goes well with figs.

I started baking my sourdough again after visiting San Francisco in December and saw that Tartine Bakery sells their country loaves for $15. Closer to home, there is a sourdough bakery close by which sells their loaves for $12.

I’ve posted bits and pieces of my process but start to finish, it’s a little different depending on what you’re making. I little cacciatore can be ready in 6 weeks while a culatello can mature for 2 years so the drying process needs to be slowed way down. I automate a little bit with grinding and climate control…. But I’m very strict about very traditional, clean ingredients and meat

It really does go well with figs 🙂

They all look fantastic.
I used to watch this Italian guy on YouTube who makes all sorts of things including charcuterie and sausages, Cuore di Cioccolato.
I made sausages in the past.

Step 1 in bread making is to get rid of that bread maker! An oven baking stone will help immensely! High Temps for better malliard reactions, depth and flavors. More sugar = more color development. Kneading by hand is also sooo important.

Sourdough is so easy to ferment with but can be hard to get the big bubbles everyone wants to see. If you need a Sourdough pitch mine has the supposed 300 year old italian mother culture received by a retired pizza shop owner from brooklyn/ny. Sourdough is life!

I'd recommend using figs in place of raisins in that King Arthur walnut sourdough recipe linked a page back. If you can find Coffee Flour it adds a berry flavor to breads that pairs great with figs! Especially on a dessert fig pizza (balsamic, goat chz, Prosciutto, fig + coffee flour in dough).

If I had time to do all that it would be great...I'm always on the move and when I do have time to slow down I just want to relax.
This machine isn't so bad, I can put the ingredients in it and set a timer...have bread ready when I get home.
I'm sure by hand is a better touch, but for busy people, we do what we can.
The first loaf to come out was very good and with fresh milled flour the taste was obviously better than any store bought.
I'll enjoy this until life slows down enough to dabble in hand made. :)

I finally got the bread maker & Mill out of the box that my wife got me for Christmas.
One of the first thing I see is Fig Bread recipe!
You know I have to try that!

This thing is really cool, and the Mill....I made about 3 cups of flour for the first run as recommended by the manufacturer to "clean" out the machine.
But dang is it ever LOUD! lol

I will be making my first loaf of bread either tonight or tomorrow, need to do some reading first.

Fig Bread!!!....I'm gonna make so much Fig Bread. Muahahaha!!!

Sounds delicious! Take a picture of it. I sometimes add fig preserves to pancake batter it's so good. I imagine fresh warm fig bread will be drool worthy

I'll be making more this weekend, runs about 3 hrs.
I'll post pics then.

I'm still trying out different things and learning this machine.

@ktrain @GoodFriendMike saw this video last night about a recipe for a bread I had never heard of before. Tomato Bread. That really intrigued me so I watched it. It is really good looking bread that now I would really want to make. Funny it’s a YouTube channel I’m subscribed to. This guy makes some real awesome recipes. Kevin I think you would really enjoy his channel too seeing your the cook in the house LOL. Anyway here’s the video

That sounds great, I have plans on trying some more bread this coming weekend.
Maybe some cinnamon raisin bread. :)

I am going to have to watch that. I have a few recipe's I wrote. My banana bread and coconut bread are very good.
But have not not tried tomato bread. Wonder what the best Tom would be for it? Dark and rich like Black krim or light and refreshing yellow pear. Now I am hungry. :)

WOW! Banana bread, coconut bread. That gives me an idea, why not combine the two together add some rum and name it Pina Colada bread. 😲
