I was at a mennonite market and couldn't resist these little sweet peppers. I'm in canning mode, so looked on Youtube for what to do with them lol.
Yes I did sit and cut the tops off and scoop out the insides, shred my cabbage and then cut a little 'flap' out of cabbage to hold the shredded part in.
It really isn't as hard as I'm making it sound. The little bits floating around are spices from my brine.
I had leftover brine, so I pickled them. Haven't tasted them yet, but wanted to share.
