Czechoslovakian Squares

The whole house is down with the COVID blues today so I made some Fig Jam and Czechoslovakian Squares, an old recipe from my PopPops cookbook that my Mother used to make when I was little.

1/2 pound butter
1 cup sugar
1/2 cup jam (I used a full cup)
2 egg yolks
2 cups all purpose flour
1 cup chopped nuts (I used walnuts)

Set oven at 325 F. Grease an 8” square cake pan. In a bowl cream the butter until soft. Gradually add the sugar, creaming until light and fluffy. Add the egg yolks and blend well. Gradually add the flour and mix thoroughly. Then fold in the chopped nuts. Spoon half the batter into cake pan, spreading evenly. Top with jam. Cover with remaining cookie dough. Bake 1 hour.

Very easy to make and not that many ingredients.

I froze half of the sheet yesterday as we don’t eat that many sweets, but already took it out of the freezer since the first half was gone by morning. It freezes well and also tastes great chilled.

I always take some to work when I make something, or just picking figs...barely anyone at my work has had fresh figs.
Though I'm sure there wouldn't be an issue making it disappear at home. lol
