I used the figs I was gifted to make a batch of Jam, they weren't as ripe as I would have let them get.
No granulated sugar used, I put in 1/2 cup honey and 1/2 cup Monkfruit sugar. (which has no impact on blood sugar)
I left it a bit chunky, that's how we roll here. :)

It was 2 lbs of figs, got 2 pint jars.

Tomorrow will be the taste tester...after it has had time to cool and sit in the fridge.

Assessment this morning, having some Jam on toast.

The recipe I used called for a bit of Cinnamon and nutmeg, I thought since the figs weren't all that great this might give it a little complexity.
My wife wasn't a fan though she was pleased with the outcome, I sort of liked it.
I didn't have Allulose so used Monkfruit sugar which I think gave it a flavor of it's own. (Also a 1/2 cup honey)
These were put in the pot quartered, then mashed with a potato masher.
My wife likes the chunkiness of Jam, so a plus there.

All in all, for a Sugar free Jam (granulated sugar) I gave it a 6 out of 10.

Next time I will leave out the spices and use Allulose.
But the figs will be sweeter to begin with. :)
 
I don’t think I’ve ever had it with cinnamon or honey. I’m sure my grandmother’s was just normal sugar. It was delicious but if we can find a good sugar free version would be preferred. Looking forward to your updates. 👍

Not a bad start, like you said next time you adjust based on this test. at least you got it done, I am too lazy to do it so far 🤪
