A Local Yellow Fig Over 50 Years Old

This is a local fig that has been grown here for I know over 50 years. They are getting harder and harder to find. I had a tree but when we poured a concrete driveway apron the water running off the apron killed it. The trees I picked these off of froze to the ground so I'm just getting regrowth. We are on the Mississippi Gulf Coast and these trees are within say 35 miles of the Coast. Thoughts to variety possibly.

It has a open eye, turns yellow with checks, syrupy sweet honey drips from an open eye, and the eye rarely is positioned where water will rain in. I will post pictures of the leaves later this morning.

Here are pictures of the new growth. They were both close to 6ft tall before the freeze killed them back to the ground.
